Pumpkin Spice Snack Cake

returns each fall in so many forms. I can't help but participate in seasonal bakes like this, half of the fun of recipe creation revolves around seasonal flavors or holiday baking (in my opinion).

This cake is so much easier to make than pumpkin pie, has a dense mouthfeel similar to pumpkin bread, and is not overly sweet. I love to have a small slice with breakfast or lunch.

Pumpkin snack cake goes sooo well with coffee or tea, recipe testing this cake made me want to have a fall tea party or brunch party. I hope this recipe inspires you to gather and indulge with friends and family.
