Oatmeal Blondies with Macadamia Nuts
I strongly believe that oatmeal enhances almost any baked good.
I also think oatmeal cookies baking in the oven smell better than just about any other baked good.
When baking with basic buttery, sugary, and cinnamony flavors, the addition of oatmeal highlights each layer of flavor, and provides an amazing chew that few other ingredients can replicate.
I was determined to create an oatmeal blondie that I really loved, combining two favorite cookie bar flavors in one.
The result is just too good! I leave one element of the recipe up to you: butterscotch chips, white chocolate chips or dark chocolate chips, what are you having?! Of course you could include a combination of flavored chips, if you like. Using white chocolate chips draws from the classic white chocolate macadamia nut cookie (one of the inspirations for this recipe) if you're looking for a more tried and true flavor pairing. I personally adore the butterscotch/oatmeal/macadamia mash-up. Whatever combination you choose, these chewy, buttery, flavorful blondies won't disappoint!
