Espresso Pumpkin Smoothie
The first recipe in a series of five - "Ways to Use Half a Can of Pumpkin Puree" - let's keep that pumpkin puree from going to waste!

Coffee almost always makes its way into my smoothies. As a former barista and smoothie maker, I've found the two work very well together.
One of my old favorites: espresso and acai smoothie, to rush through the lunch break.
When you need caffeine and protein, and are short on time, or need a meal you can eat on your way to work - turn to a high calorie, high protein recipe - like this one.
This recipe draws from all my smoothie favorites to include espresso or coffee, peanut butter or other nut butter, a strong flavored fruit or vegetable (pumpkin, in this case, has a much stronger flavor than banana) and a high fat milk to create the creamiest texture and pack in healthy calories.
To me it seems most pumpkin recipes use only half a can of pumpkin puree. Pumpkin pie always uses a whole can, and some pumpkin bread recipes, too. But, for the most part I'm left with a half can of pumpkin and a short timeframe to bake another pumpkin dessert! So, if you already baked pumpkin muffins this week, and aren't ready to bake another pumpkin recipe with the puree hiding out in the fridge, make this smoothie instead!
